It is Halloween everyone, so I thought I'd treat all you lifestyle readers, with a delicious and nutritious recipe inspired by the most seasonal vegetable during this time of year - PUMPKIN!
Pumpkin is a food that has high amounts of potassium, smaller amounts of calcium, iron, magnesium, phosphorus and it contains a generous serving of vitamin A. The effect of having high levels of potassium in the body helps to lower blood pressure as potassium causes sodium to be excreted from the body. Water pressure in the body tends to be greater when sodium levels are high, which can influence our blood pressure. Also, coconut milk is very dense, which causes it to have a slow releasing effect. This insures that you feel fuller for longer without the need to snack. The Thai’s were born eating coconut milk and they are all very super slim and healthy.
With that in mind, here is a quick and easy recipe to make Thai coconut pumpkin curry...
500 grams of peeled pumpkin
2 small red onions
3 cloves of garlic
400g coconut milk
Sprig of coriander
1/2 tsp of Thai curry paste
Peel and slice the pumpkin, carrots, onions and garlic into small pieces. Add a pan of water to boil. Place the pumpkin, carrots, onions and garlic into the hot water until soft. Then add the pumpkin, carrots, onions, garlic, coconut milk and Thai curry paste into a blender until pureed. Place into a bowl and season with the coriander.
